Good Cheese Sandwich

I suppose that you can use any kind of you cheese that you like. I use chedar. Sliced or shredded works just fine. I've heard it said for optimum cheese coverage the only way to go is with schredded cheese.

Two veriations.
Minimal labor version. 'V1' Lightly coat (as in scare) a slice of bread with dijon style mustard. Cover that slice of bread with cheese. Top with other slice of bread. Toast in toaster oven.

Version Two 'V2' is quite a bit like version one except that it is pan toasted in butter. I quite like version two but you must keep an eye on it to make sure that it doesn't burn.

For lunch today I tried a variation of 'V2'. I butter the bread and set in a skillet to toast light spead mustard on one slice and added cheddard cheese slices. After the cheese had melted and the bread was nicely toasted I removed the bread from the skillet coated the piece of bread without cheese with mayonaise and added a generous layer of tomatoes with salt and pepper. Very good. This deserves a repeat.

I must confess that my original thought in putting cheese on these was so the meat wouldn't fall out. But it's also very delicious.
Prep of each of these is as follows:
Put a layer of cheese on two slices of bread. Like you're making two open face cheese sandwiches or more precisely: Cheese Toast,
Toast them to melt the cheese. While the cheese is still molten, add the meat and top with the other cheese toast.

Simple
After this, I slide the completed sandwich into a plastic sandwich bag for my lunch.
